Coconut cupcakes or loaf

I have made these cakes a couple times, they are moist, fluffy and most importantly coconutty! However I have used the unit of cps for this recipe, this means that you can either use a normal mug and estimate or you can get measured cups and use them, either will suffice for this recipe!

Ingredients;

1 1/2 cups of desiccated coconut

2 cups of flour (all purpose or self raising)

1/2 cup of butter, melted

1/3 cup of milk (more if needed)

2 eggs

1 1/2 teaspoon baking powder (only 1/2 tsp if using self raising flour)

 

Method

  1. Firstly, combine the wet ingredients (milk, eggs, melted butter)
  2.  Next whisk in the flour until smooth
  3. Fold in the coconut and baking power
  4. finally line a baking tin or cupcake tin and pour in

cupcakes – gas mark 5 – 15-20 mins or until golden

loaf – gas mark 5 – 20-30 mins or until golden
