Bacon and Maple Syrup Cupcakes

  • 225 g plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • 100 g very soft butter or margarine 
  • 100 g soft light brown sugar
  • 2 large eggs
  • 75 ml plain yoghurt or milk
  • 75 ml maple syrup or golden syrup
  • 1 handful of crispy bacon! 
  • Beat together the brown sugar and butter until light in colour and mix in the milk. 
  • Next combine the other wet ingredients such as the eggs and syrup. 
  • Mix in the flour, bicarbonate soda and baking powder too
  • Finally add the bacon and fold in. 
  • Put into bun cases and bake at gas mark 5 for 20 minutes or until the top is golden and cooked all the way through.
